Let’s assume we use the current build as a base to start. We upgrade the circuit to 50A GFCI. We replace the mash heater with a RIMS rocket from Blichmann. (3500W @240vac - 14.6A)  Lets also replace the boil heater with a Blichmann boil coil   (4500W @240vac - 18.75A). If we remove the 3 way switch and replace it with 2 on/off switches, I see nothing else that would need modified to run both sides of the circuits at the same time. Thoughts?
